Winning Recipes!

Last week we posted about the Westridge Ward BBQ. As part of the fun, they hosted a competition for the best dessert and best side dish- and we have the winning recipes to share!

Here's the recipe for The Best Side Dish:



Smokin' Jalapeño Poppers
Jalapeños: get desired amount, cut off top, clean out seeds
Bacon: fry some up, cook until half way done 
Cheese of choice (preferred pepper jack): cube it
Stuff jalapeños with cheese, wrap bacon around secure with toothpick
Salt and pepper to taste
Smoke, bake, or grill for 30 min at 350 degrees. 
For best results, jalapeños should be cooked upright to keep cheese inside. 

And, now the recipe for Best Dessert:
 
 

Chocolate Mint Brownies

I use a large jelly roll pan to bake these in (11 1/2 x 16 1/2), so I have to 1 1/2 this recipe. The recipe below is just for 1 batch. 
 
Melt 2 cubes of butter and add:
1/2 cup cocoa
2 cups sugar
 
With mixer, beat in 4 eggs, one at a time. 
Add: 
1 3/4 cup flour
2 tsp. vanilla
 
Grease and lightly flour pan. 
Bake at 350 for 20-25 min. (Do not over bake!)
Chill in fridge before applying frosting. (I usually make the brownies the 
night before and frost in the morning) 
 
Frosting
 
Beat until fluffy:
1/2 square butter
2 cups powdered sugar
Small amount of milk 1/2 tsp peppermint
1-2 drops green food coloring 

Apply frosting, and then chill again. 
 
Melt together in microwave:
1 cup semi-sweet chocolate chips
1 Tbsp shortening 

Drizzle chocolate over frosted brownies, and let chocolate harden a bit before 
serving. 
 
(I like to cut them all out after they have been frosted and chilled. 
Then, I drizzle the chocolate on top. They seem to look nicer that way, but either
way, they are delish!)
