Do you have a TON (literally!) of whole wheat kernals sitting in your food storage that you simply don't know what to do with? How about making some delicious and healthy whole wheat pancakes? No grinder is necessary!
Here's the recipe*:
1 Cup whole wheat
1 1/2 cup milk, divided
1 egg
1/4 cup vegetable oil
1/4 cup applesauce**
2 teaspoons sugar
1 teaspoon salt
1 tablespoon baking powder
Blueberries, optional
Blend wheat and 1 cup milk on high speed for 3 minutes. Add an additional 1/2 cup milk; blend an additional 2 minutes. Add the remaining ingredients and blend well. Pour batter on hot griddle or in waffle iron. Sprinkle 4-5 blueberries on top, if desired. Serve warm with butter, syrup, or your favorite jam topping.
*After I mix this recipe, I like to add either 1 cup of Krusteaz Pancake mix with 3/4 cup water, or add in a flour based recipe to the mix. I have found that just this recipe makes for a grainy pancake- which still tastes good, but I like my pancakse a little fluffier, so adding the traditional flour mixture to this recipe makes a perfect pancake, in my opinion. But, experiment! That's the best part of cooking- experimenting to figure out the perfect recipe for you!
**You can use vegetable oil in place of the applesauce. Applesauce reduces the grams of fat.
